While experimenting to create these recipes, I was not looking for ‘egg substitutes’. In fact I took a completely new approach – and came up with a combination of many unusual ingredients and techniques. For example, apart from baking powder and baking soda, I have used fizzy bottled soda and cola drinks also! White vinegar is another ingredient that lightens the
batter without adding its own taste. Yogurt, buttermilk and tinned condensed milk have also been used.
